Banana Peanut Butter Baked Oatmeal

Ingredients:
• 1 1/2 cups olled oats
• 1 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• 1/2 teaspoon baking powder
• 1/8 teaspoon salt
• 2 very ripe bananas, mashed
• 1/3 cup creamy peanut butter
• 1 1/3 cups unsweetened almond milk
• 1 tablespoon maple syrup or honey
• 1 tablespoon vanilla extract
• 1 tablespoon chia seeds
Directions:
1. Preheat oven to 375 degrees
2. Grease an 8x8 baking pan with cooking spray or coconut oil
3. Combine oats, cinnamon, nutmeg, baking powder, and salt
4. In a separate bowl, mash bananas and whisk in peanut butter, almond milk, maple syrup/honey, vanilla extract, and chia seeds
5. Whisk dry ingredients into wet ingredients until well combined
6. Pour into greased pan and bake 30-40 mins until top is golden brown
