Chicken Orzo Salad

Ingredients
• 1 cup orzo (uncooked)
• 2 cups chicken breast, shredded
• 1 red onion, diced
• 4 cups spinach
• 1 can chickpeas, rinsed and drained
• 2 cups peas
• 1/2 cup asiago cheese
For dressing:
• 1/2 cup lemon juice
• 1/2 cup olive oil
• 3 cloves garlic, minced
• 1 tsp dry mustard
• 1/2 tsp honey
• 10 basil leaves, cut into small pieces
Instructions
1. Prep dressing: Put all dressing ingredients into a mason jar, put the lid on, and shake
2. Prep the chicken: cook chicken breasts in crock pot 4-6 hours on high or bake in oven until cooked through (you can also use a rotisserie chicken)
3. Cook the orzo as directed on the packaging.
4. While the orzo is cooking, shred the chicken, dice the onion, cut up the spinach.
5. Assemble 4 bowls combining the orzo with the chicken, onion, spinach, chickpeas, and peas evenly. Sprinkle in the asiago cheese.
6. Store in an airtight container in the fridge for up to 4 days.
