Turkey Spinach Meatloaf Muffins

Ingredients
• 1 pound frozen chopped spinach
• 1 tablespoon coconut oil
• 1/2 cup finely chopped yellow onion
• 1/2 pound mushrooms, finely chopped
• 1/4 cup coconut milk
• 1/2 cup diced celery
• 1/2 cup chopped parsley leaves
• 1 pound ground organic turkey
• 1 medium garlic clove, minced
• 1 teaspoon sea salt
• 1 1/2 teaspoons ground black pepper
• 1/4 teaspoon ground nutmeg
• 2 large eggs
• Optional: Top with bacon slices
Instructions
1) Preheat the oven to 350 degrees Fahrenheit
2) Defrost the spinach and press out as much liquid as you can
3) Saute the mushrooms and onions in the coconut oil until soft and ass salt and pepper to taste
4) Puree celery, parsley, and coconut milk
5) Place all ingredients in a large bowl (ground turkey, puree, spinach, spices, eggs etc)
6) Use your hands to mix the ingredients together
7) Transfer mixture into 12 greased muffin tins and bake for 60 minutes until brown and slightly crisp on top
8) If using bacon, place bacon on top of each muffin and broil at the end for 3 minutes
