Turkey Egg Roll in a Bowl

Ingredients


• 1 lb lean ground turkey

• 2 cups shredded cabbage

• 2 cups shredded carrots

• 1 medium onion, chopped

• 3 cloves garlic, minced

• 1 tsp ground ginger

• 3 tbsp liquid aminos or soy sauce

• 2 tsp rice vinegar

salt & pepper to taste


Instructions


1. Brown  the ground turkey until fully cooked and remove from pan

2. Add onions and garlic to the pan and sauté until nearly cooked through

3. Add the cabbage and shredded carrots (or coleslaw mix) and continue to cook about 15 minutes

4. Mix in cooked ground turkey

5. Add the liquid aminos or soy sauce and rice vinegar

6. Add ground ginger and salt & pepper to taste

7. Simmer for about 7 minutes, then divide into meal prep containers.
