Chicken Tex-Mex Couscous Bowls

Ingredients
• 2 cups plain couscous
• 2 teaspoons of extra virgin olive oil, divided
• 1 sweet onion, sliced
• 2 cups cooked shredded chicken breast
• 8 cherry tomatoes, halved
• 2/3 cup black beans, drained and rinsed
• 1 avocado, sliced
• 1 red bell pepper, sliced
• Optional Toppings: jalapeno, cilantro, lime juice, dressing
Instructions
1. Cook couscous according to package instructions and set aside.
2. Add 1 teaspoon of extra virgin olive oil to a sauté pan over low/medium heat. Cook onions for 8 minutes stirring occasionally. Remove from pan.
3. Bring heat to medium, add the rest of the olive oil to the pan and add chicken. Cook for 5 minutes.
4. Pour couscous into a large bowl. Top with the onions, chicken, tomatoes, black beans, avocado and bell pepper.
